Inspired by fresh, laid-back Northern California cuisine with a dose of the New
England coast, The Duck & The Peach is a New American concept located in
the heart of DC's Eastern Market, Capitol Hill neighborhood. It is owned by
Hollis Silverman and operated together, with her mostly women-led team. In this
segment, Tracey interviews Hollis and Chef Kat Petonito to learn about their
three-day process for preparing rotisserie duck to perfection. Tracey also
meets lead mixologist, Alex Pisi, who expertly demonstrates his exclusive
gin-based cocktail, Corn Maize, made with fresh juice extracted from corn!
